Ingredients
  

For the Mushroom Caps
  • 1 pound large white or cremini mushroom caps
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
For the Stuffing
  • 0.5 cup breadcrumbs Italian seasoned
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup finely chopped onion
  • 2 cloves garlic minced
  • 0.25 cup finely chopped fresh parsley
  • 2 tablespoons olive oil
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Clean mushroom caps with a damp paper towel and remove stems.
  3. Brush mushroom caps with olive oil, sprinkle with salt and pepper.
  4. In a bowl, mix breadcrumbs, Parmesan cheese, onion, garlic, parsley, and olive oil. Season with salt and pepper to taste.
  5. Spoon the stuffing mixture into each mushroom cap, mounding it slightly.
  6. Place mushrooms on a baking sheet.
  7. Bake for 20-25 minutes, until mushrooms are tender and stuffing is golden brown.
  8. Let cool slightly before serving.

Notes

Use fresh ingredients - freshly grated Parmesan has better flavor than pre-shredded. Clean mushroom caps thoroughly but avoid soaking to prevent waterlogging. Don't overmix stuffing; slightly crumbly texture is ideal. Add more olive oil if stuffing seems too dry. Monitor baking time as it varies by mushroom size and oven. Can add vegetable or chicken stock during baking for moisture and flavor. Garnish with fresh parsley or drizzle with balsamic glaze before serving.
