- Preheat oven to 350°F (175°C).
- In a large bowl, combine all meatball ingredients. Mix gently until just combined.
- Roll the mixture into 1-inch meatballs.
- Arrange meatballs on a baking sheet.
- Bake for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the cranberry sauce.
- In a medium saucepan, combine cranberries, orange juice, sugar, chili sauce, apple cider vinegar, and cinnamon.
- Bring to a boil over medium heat, then reduce heat and simmer for 10-15 minutes, or until cranberries have burst and sauce has thickened.
- Once the meatballs are cooked, transfer them to the saucepan with the cranberry sauce.
- Stir to coat the meatballs evenly.
- Serve hot and enjoy!
Notes
Don't overmix the meatball mixture. Use fresh or frozen cranberries for the sauce; no need to thaw frozen cranberries. Adjust the sugar in the cranberry sauce to suit your taste. Use good ground beef and you can add a bit of ground pork to the mixture for extra flavor enhancement. While the sauce is simmering, taste it and adjust it to your preference.
