  • Mashed bananas super ripe, spotty
  • Nut butter Almond butter or any well-mixed nut butter
  • Rolled oats Old-fashioned
  • Cinnamon Ground
  • Vanilla Real extract
  • Maple syrup Real
  • Chocolate chips Semi-sweet, dark, or mini
  • Salt A pinch

Method
 

  1. Preheat your oven to 350°F. Line a 9x9-inch baking pan with parchment paper to ensure the bars do not stick.
  2. In a large mixing bowl, add the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt.
  3. Stir all the ingredients together until they are well combined and the oats are evenly coated.
  4. Transfer the mixture into your prepared baking pan. Use a spatula to flatten it into an even layer. You can sprinkle a few extra chocolate chips on top if desired.
  5. Place the pan in the oven and bake for 18 to 20 minutes. The bars are done when the edges are golden brown and the center appears set.
  6. Remove the pan from the oven and allow the bars to cool completely in the pan. This is a crucial step as the bars firm up as they cool. Once cooled, slice them into squares.

Notes

Use heavily spotted bananas for the best flavor and allow the bars to cool completely in the pan to set properly so they do not crumble. These bars can be stored in an airtight container for 2 days, refrigerated for 5 days, or frozen for up to 3 months.
