Preheat oven to 375°F (190°C). Pound chicken breasts to an even thickness (about 1/2 inch). This ensures even cooking.
In a bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, garlic powder, oregano, salt, and pepper.

Place chicken breasts in a shallow dish or zip-top bag. Pour marinade over the chicken, ensuring it's well coated. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.

Arrange marinated chicken breasts in a baking dish. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Remove from oven and top each chicken breast with sliced mozzarella cheese.

Turn on the broiler and broil for 1-2 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning!
