- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the zucchini slices with olive oil, minced garlic, Italian herbs, salt, and pepper. Make sure the zucchini is evenly coated.
- In a separate bowl, combine the Parmesan cheese and breadcrumbs. Mix well.
- Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
- Sprinkle the Parmesan cheese and breadcrumb mixture evenly over the zucchini slices.
- Bake for 15-20 minutes, or until the zucchini is tender and the topping is golden brown. Bake until the breadcrumbs are light brown.
- Remove from the oven and let cool slightly before serving.
Notes
Choose firm, medium-sized zucchinis. Don’t overcrowd the baking sheet. For an extra crispy topping, broil the zucchini for the last 1-2 minutes, but watch it closely to prevent burning. Feel free to add a pinch of red pepper flakes to the Parmesan mixture for a subtle kick. For a vegetarian option, use a vegetarian parmesan cheese. If you don’t have breadcrumbs on hand, crushed Ritz crackers also work wonderfully. Pat the zucchini dry with paper towels after slicing to remove excess moisture.
