Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch thick rounds
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs panko or Italian seasoned
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian herbs
  • to taste Salt and pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the zucchini slices with olive oil, minced garlic, Italian herbs, salt, and pepper. Make sure the zucchini is evenly coated.
  3. In a separate bowl, combine the Parmesan cheese and breadcrumbs. Mix well.
  4. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  5. Sprinkle the Parmesan cheese and breadcrumb mixture evenly over the zucchini slices.
  6. Bake for 15-20 minutes, or until the zucchini is tender and the topping is golden brown. Bake until the breadcrumbs are light brown.
  7. Remove from the oven and let cool slightly before serving.

Notes

Choose firm, medium-sized zucchinis. Don’t overcrowd the baking sheet. For an extra crispy topping, broil the zucchini for the last 1-2 minutes, but watch it closely to prevent burning. Feel free to add a pinch of red pepper flakes to the Parmesan mixture for a subtle kick. For a vegetarian option, use a vegetarian parmesan cheese. If you don’t have breadcrumbs on hand, crushed Ritz crackers also work wonderfully. Pat the zucchini dry with paper towels after slicing to remove excess moisture.
