  • 3-4 large russet potatoes scrubbed and sliced into wedges
  • 4 Tbsp olive oil
  • 1/2 cup shredded parmesan cheese
Seasoning Mix
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a large baking sheet and set aside.
  2. Place potato wedges in a large bowl. Drizzle with olive oil and toss thoroughly to coat.
    3-4 large russet potatoes, 4 Tbsp olive oil
  3. In a small bowl, whisk together the salt, garlic powder, and Italian seasoning.

  4. Sprinkle the shredded Parmesan cheese over the oiled wedges and toss to coat. Then sprinkle the seasoning mixture over the wedges and give a final gentle toss to distribute.

  5. Place potato wedges on the prepared baking sheet in a single layer with skin-sides-down. Bake for 25-35 minutes until potatoes are fork-tender and golden.
  6. Remove from oven, sprinkle with fresh parsley if desired, and serve immediately with your favorite dipping sauce.

Notes

For Crispy Wedges: Pat potato wedges completely dry before adding oil. Don't crowd the baking sheet. Placing them skin-side down is key for even browning.
