  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Fresh basil leaves for garnish
  • 1/4 cup olive oil
  • Salt and pepper to taste

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine halved cherry tomatoes, sliced red onion, and minced garlic.
  3. Drizzle the olive oil over the vegetables. Season with salt, pepper, dried oregano, and red pepper flakes (if using). Mix well.
  4. Place the block of feta cheese in the center of the baking dish, nestled among the vegetables.
  5. Bake for 15-20 minutes, or until the feta is softened and slightly golden. The tomatoes should be bursting and juicy.
  6. Remove from oven and garnish with fresh basil leaves.
  7. Serve immediately with crusty bread for dipping.
