Ingredients

  • 4 boneless skinless chicken breasts (about 8 oz each), sliced in half lengthwise to make 8 pieces
  • 3/4 cup seasoned breadcrumbs (such as 4C or gluten-free crumbs)
  • 1/4 cup grated Parmesan cheese or Romano cheese
  • 2 tablespoons melted butter or olive oil
  • 3/4 cup part-skim mozzarella cheese
  • 1 cup marinara sauce or homemade tomato sauce
  • Cooking spray
  • Fresh basil or parsley for garnish optional

Equipment

  • Baking Sheet
  • Shallow Bowl
  • Oven

Method

  1. Prepare the Oven and Pan: Preheat your oven to 450°F. This high temperature is essential for creating a crispy crust. Lightly spray a large baking sheet with cooking spray.

  2. Set Up Breading Station: In a shallow bowl, combine the seasoned breadcrumbs and the grated Parmesan cheese. In a separate small bowl, melt the butter (or prepare your olive oil).
3/4 cup seasoned breadcrumbs (such as 4C or gluten-free crumbs), 1/4 cup grated Parmesan cheese or Romano cheese, 2 tablespoons melted butter or olive oil
  3. Coat the Chicken: Lightly brush the melted butter or olive oil onto each chicken cutlet. Immediately dip the chicken into the breadcrumb mixture, pressing firmly so the crumbs adhere to the surface.

  4. Initial Bake: Place the breaded cutlets on the prepared baking sheet. Lightly spray the tops of the chicken with a little more oil to help them brown. Bake for 25 minutes until the crumbs are golden and the chicken is cooked through.

  6. Final Melt: Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted, bubbling, and slightly browned.

Notes

To ensure your Baked Chicken Parmesan is as delicious as possible, always slice the chicken breasts in half lengthwise. Using a high heat of 450°F is the secret to getting that "fried" texture in the oven.
