Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Topping
  • 4 slices bacon cooked and crumbled
  • 1 cup sliced mushrooms
  • 0.5 cup honey mustard dressing
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions optional, for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken. Drizzle olive oil over the chicken breasts and season with salt and pepper.
  3. Sear the chicken. Heat a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until lightly browned.
  4. Transfer to baking dish. Place the seared chicken breasts in a baking dish.
  5. Add toppings. Spread honey mustard over each chicken breast. Top with sliced mushrooms, crumbled bacon, and shredded cheddar cheese.
  6. Bake. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Garnish and serve. Sprinkle with chopped green onions (if using) and serve immediately.

Notes

Sear chicken first to develop flavor and create a nice crust. Ensure chicken is cooked through (internal temperature of 165°F) before serving. Can use pre-cooked bacon for convenience. Mushrooms can be sautéed before adding for extra flavor if desired. Serve immediately while cheese is melted and bubbly.
