- Preheat your oven to 375°F (190°C).
- Prepare the chicken. Drizzle olive oil over the chicken breasts and season with salt and pepper.
- Sear the chicken. Heat a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until lightly browned.
- Transfer to baking dish. Place the seared chicken breasts in a baking dish.
- Add toppings. Spread honey mustard over each chicken breast. Top with sliced mushrooms, crumbled bacon, and shredded cheddar cheese.
- Bake. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish and serve. Sprinkle with chopped green onions (if using) and serve immediately.
Notes
Sear chicken first to develop flavor and create a nice crust. Ensure chicken is cooked through (internal temperature of 165°F) before serving. Can use pre-cooked bacon for convenience. Mushrooms can be sautéed before adding for extra flavor if desired. Serve immediately while cheese is melted and bubbly.
