  • 1 cup panko bread crumbs
  • 0.75 cup grated Parmesan cheese
  • 1 medium zucchini thinly sliced
  • 1 large egg beaten
  • Cooking spray

Method
 

  1. Gather all your ingredients. Thinly slice the medium zucchini into uniform rounds to ensure even cooking.

  3. On a shallow plate or bowl, combine the panko bread crumbs and the grated Parmesan cheese until well mixed.

  4. Dip each zucchini slice first into the beaten egg, ensuring it is fully submerged. Then, press the slice into the panko and Parmesan mixture, coating both sides thoroughly.

  5. Place the coated zucchini slices on a wire baking rack. Once all slices are breaded, lightly spray them with cooking spray to help them brown.

  7. Cook in the preheated air fryer for 10 minutes. Open the basket, flip the slices over, and cook for an additional 2 minutes until golden brown and crispy.
  8. Continue the process with any remaining zucchini slices.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F for 2-3 minutes to restore the crunch.
