Ingredients
  

  • 2 boneless skinless chicken breasts cut into strips
  • 1 red bell pepper cut into 1/4 inch slices
  • 1 yellow bell pepper cut into 1/4 inch slices
  • 1 green bell pepper cut into 1/4 inch slices
  • 1/2 yellow onion cut into 1/4 inch slices
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for drizzling

Method
 

  1. In a small bowl, combine the chili powder, paprika, cumin, onion powder, garlic powder, salt, and black pepper. Mix with a small fork to create your custom fajita seasoning.
    2 teaspoons chili powder, 1 teaspoon paprika, 1/2 teaspoon cumin, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon black pepper
  2. Slice the red, yellow, and green bell peppers, along with the onion, into even pieces.

  3. Place the chicken strips, sliced onions, and bell peppers into a large mixing bowl. Drizzle with olive oil and toss to coat. Add the prepared seasoning and toss again until every piece is evenly coated.

  4. Transfer the seasoned chicken and vegetable mixture into the air fryer basket.
  5. Cook at 350F for 16 to 20 minutes. It is important to remove the basket and toss the ingredients halfway through the cooking time (at about the 9-minute mark) to ensure even browning.
  6. Once the chicken is cooked through, remove from the air fryer and serve immediately in warm tortillas with your favorite garnishes.

Notes

Try to cut your chicken strips and vegetables into similar sizes so they all finish cooking at the same time. Leftovers can be stored in the refrigerator for up to 4 days.
