Method
- Preheat your oven to 375 degrees Fahrenheit. Position the oven rack to the top position and line a large baking sheet with parchment paper to prevent sticking.
- Place the cottage cheese into a food processor or high-speed blender. Pulse or blend on high until the texture is completely smooth, stopping to scrape down the sides as needed.1 cup full-fat cottage cheese
- Transfer the smooth cottage cheese to a medium-sized mixing bowl and add the self-rising flour. Mix until the ingredients are completely combined and the dough begins to pull away from the sides of the bowl.1 cup self-rising flour
- Move the dough to a generously floured work surface. Knead the dough 8 to 10 times until it is smooth; if the dough feels too sticky, add more flour one tablespoon at a time until it is manageable.
- Divide the dough into 4 equal balls (approximately 80 grams each if using a scale). Roll each ball into a rope about 6 to 7 inches long and 1 inch thick, join the ends to form a circle, and pinch the seam tightly.
- Place the shaped dough on the prepared baking sheet. Brush the tops with the beaten egg wash and sprinkle generously with your choice of seasonings or cheese.1 large egg, Everything bagel seasoning, sesame seeds, or poppy seeds, Shredded asiago or parmesan cheese
- Place in the oven and bake for 25 to 30 minutes until the flagels are puffed and golden brown. Allow them to cool for at least 15 minutes before slicing.
- Air Fryer Option: If using an air fryer, preheat it to 350 degrees Fahrenheit. Spray the basket with non-stick spray and cook for 12 to 14 minutes until golden and cooked through.
Notes
For the most authentic texture, ensure you blend the cottage cheese until completely smooth before mixing the dough. Store cooled flagels in an airtight container at room temperature for up to 4 days.
