Why You Will Love This Recipe
Growing up, Valentine’s Day meant endless boxes of chocolates filled with unknown fillings. While I appreciated the gesture, the sugar rush (and subsequent crash) weren’t always ideal. This recipe is my way of celebrating the holiday with a healthier, more satisfying treat. The peanut butter reminds me of childhood, while the heart shape symbolizes the love and warmth I want to share with my family every year!
Ingredients
- 1 cup natural peanut butter
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/4 cup coconut flour (or almond flour)
- Pinch of sea salt
- 1/4 cup dark chocolate chips (optional, for drizzling)
Step-by-Step Instructions for Making the Recipe
- In a medium bowl, mix together the peanut butter, honey, and vanilla extract until well combined.
- Add the coconut flour and sea salt. Stir until a dough forms. If the dough is too sticky, add a tablespoon more of coconut flour.
- Roll the dough out onto a lightly floured surface to about 1/4 inch thickness.
- Use a heart-shaped cookie cutter to cut out the hearts.
- Place the hearts on a baking sheet lined with parchment paper.
- If using, melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth.
- Drizzle the melted chocolate over the hearts.
- Refrigerate for at least 30 minutes, or until firm.
- Serve and enjoy your delicious and healthy Valentine’s Day PB Hearts!
