Why You Will Love This Recipe

I remember visiting my grandmother every summer. She was an amazing cook, and her kitchen always smelled like a little bit of heaven. One time, she tried to make a Creamy Marry Me Shrimp Pasta. The problem ? She was experimenting on the go, never wrote the recipe down and never made it the same way twice. Every visit since I tried to replicate that dish. After years of experimenting I think I finally got it down and it’s so tasty and worth it. This recipe is all about bringing back those flavors of delicious food and connection, without spending hours in the kitchen.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 pound linguine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Step-by-Step Instructions for Making the Recipe

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); cook for about 30 seconds until fragrant.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. Add sun-dried tomatoes to the skillet and cook for 1 minute.
  5. Pour in chicken broth and bring to a simmer. Cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste. Simmer for 2-3 minutes, until the sauce has thickened slightly.
  7. Add cooked pasta and shrimp to the skillet. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  8. Stir in fresh basil.
  9. Serve immediately, garnished with additional Parmesan cheese.
